Following the footsteps of ancient Chinese over 2000 years ago, I made my first piece of homemade tofu. Unlike ancient people who used nigiri coagulant, I used lime juice and vinegar. To make a mould, I hacked a bamboo box from IKEA by drilling drainage holes at the bottom. The resulting tofu is admittedly ugly and dry. Sometimes you make stuff and they turn out to be terrible, but if you like them enough, soon you'll be making them again. What would I do differently next time? Use nigiri instead of lime juice and vinegar.
